This is my favorite cut. It has enough fat to make it juicy, and the taste to make it memorable. Something we grass-feeders often forget is that you can eat our fat. That’s where the Omega-3 fatty acids are. It will take some education to get everyone back on the right track, but all fat isn’t bad. Take the rib-eye for instance.
