Though not as tender as the rib-eye or the tenderloin, the strip is preferred by many, primarily for the taste. Grass-fed will be a deeper taste, but not necessarily grassy. I call Tallgrass an “original” taste. You can almost hear the low breathing of the herd under the stars.
