    Q: What is Tallgrass Beef Company?
    A: Tallgrass Beef Company is a producer of 100% grass-fed beef. We carefully select heritage bloodlines derived from certain breeds of cattle, raise them according to strict protocols, and closely monitor their processing into the finest 100% grass-fed beef available. We then supply that beef to restaurants, grocery stores, food service companies and directly to consumers through our website.

    Q: Where do you get your cattle?
    A: We have our own ranch in Sedan, Kansas where many of our cattle are born and raised. We also work with a number of USA Family Farmers and Ranchers who supply us with cattle raised to stringent standards for humane care, environmental sustainability, and human health. By raising our own cattle and working with select partners, we are able to ensure that all our beef comes from cattle that are 100% grass-fed.

    Q: What does "100% grass-fed" mean?
    A: It means that our cattle eat only grass and other forages for their entire lives. Some "grass-fed" beef comes from cattle that are "grain-finished" to add fat and marbling, but our cattle are 100% grass-fed and finished. They never eat grain.

    Q: Why is grass-fed beef better?
    A: Grass is the natural diet of cattle. Cattle that are 100% grass-fed are healthier, and so is their beef. It is higher in numerous antioxidants, including, Vitamin E and B Vitamins, as well as Vitamin A and CLA's. Grass-fed beef also has a better balance of Omega-3 and Omega-6 fatty acids, a favorable unsaturated to saturated fatty acid ratio, and is lower in total fat; plus, it provides more total dietary protein.

    Q: What makes Tallgrass Beef better than other grass-fed beef?
    A: Two things separate Tallgrass Beef from other grass-fed beef: heritage genetic bloodlines and ultra-modern technology. Tallgrass cattle are derived from special genetic stock whose origins are verified and fully traceable. We use ultrasound technology to safely and humanely identify the animals with just the right amount of marbling and muscle. Through this unique combination of traditional breeding and ultra-modern technology, Tallgrass produces the most tender, best-tasting grass-fed beef available.

    Q: Is Tallgrass Beef a natural or organic product?
    A: Tallgrass 100% grass-fed beef is an All Natural product, free of any synthetic or administered hormones, antibiotics, animal byproducts, or pesticides.

    Q: Are Tallgrass cattle raised in a humane environment?
    A: Yes. Tallgrass Beef cattle aren't kept in pens or feedlots—they spend their life in a pasture, in a stress-free environment, grazing in the kind of communal groups they prefer. They aren't given hormones to enhance their growth and they have no need of antibiotics to help them digest grain, which isn't their natural food. They live as nature intended.

    Q: Is Tallgrass Beef as tasty and tender as grain-fed beef?
    A: Tallgrass Beef comes from cattle specially selected to produce the finest grass-fed beef. We believe our products are unmatched in taste and tenderness, whether compared to other grass-fed beef brands or grain-fed beef. But reading words on a page can't possibly answer that question for anyone. We invite you to try Tallgrass Beef and decide for yourself.     Q: How does Tallgrass Beef guard against "mad cow disease" (bovine spongiform encephalopathy, or BSE)?
    A: Tallgrass Beef cattle are never given feed containing animal by-products, which is the primary source of BSE transmission. Our cattle eat only grass for their entire lives. We also monitor all our cattle very closely and never process any animal that is sick or injured. And, because grass-fed cattle take longer to develop than grain-fed cattle (who are often given hormones to speed their growth), we are able to monitor our cattle longer to detect any anomaly. Finally, we use DNA TraceBack, from IdentiGEN to provide a reliable and accurate traceability system for every cut of our beef. Every steak, roast and pound of ground beef can be traced back to the family farm or ranch where the animals were raised. As a company, this allows us to provide the highest possible quality assurance regarding our products and to stand behind every piece of meat.

    Q: How is Tallgrass Beef processed?
    A: All Tallgrass Beef is processed at a family-owned, USDA-certified facility near our ranch in Kansas. The facility employs humane handling techniques developed by Dr. Temple Grandin, the world's foremost authority on humane animal handling.

    Q: Does Tallgrass use "needling" methods to tenderize its beef?
    A:
     No. Tallgrass does not "needle" its beef.  The grass-fed diet our cattle consume is completely compatible with their digestive systems, resulting in the production of naturally tenderized cuts of beef. We have no need to mechanically tenderize our cuts of beef. This helps avoid potential E. coli or other bacterial contamination that has been connected with this process in some cases.

    Q: How will my Tallgrass Beef arrive?
    A: Your Tallgrass Beef will be frozen and vacuum-packed when it arrives. If your beef is not frozen when it arrives but is still cool to the touch, you can either put the beef in your freezer for later thawing and use or in the refrigerator for cooking within 48 hours after thawing.

    Q: What is the best way to defrost my Tallgrass Beef?
    A: We recommend that you defrost your beef by placing the vacuum-packed bag in the refrigerator or on a stainless steel plate or cutting board for a minimum of 12 hours prior to cooking.

    Q: What is the best way to cook my Tallgrass Beef?
    A: Tallgrass grass-fed beef will cook approximately 30% quicker to the same degree of doneness when compared with grain-fed beef. This is due to the favorable difference in the fatty acid profile. Because grass-fed beef has more total unsaturated fatty acids than grain-fed beef, the fats have a lower melting point and will reach the same degree of doneness in 30% less time.
